Summer Rice Paper Rolls w/ Peanut Sauce
2 garlic cloves
1 Tbsp chunk of ginger, peeled and chopped
2 Tbsp coconut aminos
2 Tbsp fresh Lime juice
Chili powder, to taste
1/3 cup natural raw peanut butter
1/4 cup water (as needed or add a little more if needed)
1 cup rice noodles or kelp noodles (I just placed mine in a bowl of warm water to soften and then strained)
5-8 rice paper sheets
1 cup Fresh basil
1/2 cup Cilantro/Coriander
1-2 Kale leaves, roughly chopped
1/2 Red Pepper
To make the Peanut Sauce:
Blend together all the ingredients until smooth.
To make the Wraps:
1. Cut all the veggies into thin strips.
2. Dip your rice paper sheets in warm water so they soften and become pliable (do this one at a time), then arrange your fillings in the middle.
3. Fold over two ends, then wrap it up like a burrito, making it as tight as possible.
4. Serve with the sauce and enjoy the incredible flavors bursting into your mouth.
